2、鸭胗,又叫鸭肫,就是鸭的胃部,清洗时要剥去内壁黄皮,还要用盐和生粉搓洗,再放入沸水中汆烫,便可去除杂质和异味。

3、鸭胗飞水和拌炒时间皆不宜过长,焯至鸭胗变色就可以捞起,久炒的鸭胗会过老,不再爽脆。
